Dhai ki khadi

It is a Spicy dish whose thick Gravy is based on Chickpea flour (called Besan in Hindi and Urdu) and contains Vegetable fritters called Pakoras, to which sour Yogurt is added to give it a little sour taste.  It is often eaten with boiled Rice or Roti.





INGREDIENTS: 

Yogurt (Curd) 700 gm

Red Chili powder 1/2 tsp

Green Chilies 9-10

Turmeric Powder 1/2 tsp

Coriander Powder 1/2 tsp

Cumin Powder 1/2 tsp

Coriander Leaves 1/2 Bunch

Curry Leaves 10

Besan (Chickpea flour) 4 tbsp

Lemon Juice 1/2 tsp

Onion 1 medium sliced finely

Salt to taste

#FOR THE BHAJIS (a small flat cake or ball of vegetables, fried in batter)
1 cup Besan
(Chickpea flour) mixed with 1/2 tsp Red chili powder,Turmeric powder,Salt and 1/2 tsp Ginger-Garlic paste and Water.,see that the consistency of this paste is medium thick as u need to deep fry them. Veg:Potato, Onion, Brinjal (Egg plant) & Carrot .

FOR THE BAGAAR (Seasoning)


Jeera(Cumin seeds) 1 tsp 

Rai (Mustard seeds)1/2 tsp

Curry Leaves few

Dried Red chilies - 5 


METHOD: 


Put the Yogurt (Curd) in a juicer grinder along with Salt, Red Chili powder, Turmeric powder,Coriander powder,Cumin powder,Besan(Chickpea flour), Green Chilies and Coriander Leaves and grind it properly.(you can also use a Kitchen Pestle)

Later transfer the Yogurt (Curd) into a vessel add in some Curry Leaves and a sliced Onion also add double amount of 1.5 liter of Water then cook this on a low flame for 25-30 mins.

Keep it aside.

Deep fry the Bhajias to golden brown and add them into the cooked Yogurt .

Lastly heat some Oil in a pan and add Jeera(Cumin), Rai(Mustard seeds), Curry Leaves and dried Red Chilies till it splutters.
Transfer this to the dahi kadi and add the Lemon Juice.

SERVE IT HOT:


with boiled Rice or Roti.
