SUGAR TWISTER





















Are you bored with Cakes and Cookies!!! if so just go a little Desi :)  Peni is a simple fried Sweet that would tempt your tongue. Its all about putting your favorite ingredients together in a different form. :) Enjoy making :)

Ingredients: 

All purpose Flour(Maida) - Required quantity to make the Dough
Powdered Sugar - 1 1/2 cup 
Semolina(Rava) -2 tbsp
Salt- 1 pinch
Rice Flour 3 tbspMilk - 1 cup 
Ghee - 1 cup
 
Ground Cardamom 1/2 tsp
Oil - For deep frying
 


Method: 



  • Mix the Sugar&ground Cardamom in a small bowl and set aside until ready to use.
  • Mix Flour, Semolina, 2 tbsp solidified Ghee and Salt in a mixing bowl. Rub the Ghee into the Flour and Semolina, so that the mixture resembles crumbs. Slowly add Water and knead it into a smooth Dough. Cover and set aside for at least 1 hour.
  • When ready to prepare Peni, mix the remaining 2 tbsp Ghee and Rice Flour in a bowl and keep aside.
  • Divide the dough into 3 equal portions. Roll each into a thin circle. Smear the Ghee-Rice flour mixture on top of the rolled out circle. Place another rolled out circle on top of the 1st circle. Repeat this rolling, smearing with Ghee-Rice flour mixture and layering with the remaining dough balls. Apply the Ghee mixture on the top circle.
  • Starting from one end, roll the layered circles like a carpet into a tight log. Tuck the ends securely.
  • Cut the log into 1" pieces. Roll each piece again into a circle and press lightly with your hand.
  • Heat Oil for deep frying. Fry each circle on low flame until done, taking care not to change the color of the Peni. Drain on Tissue Paper.
  • Sprinkle powdered Sugar and Cardamom on a top of Peni when it's warm, otherwise it will not stick to it. 
Yummy  Peni is ready to eat.. Absolutely drool worthy simple dish and I am sure you would agree with me.
